  I found a recipe in my old posts. yeast dough   under the name "Air", which at first glance does not combine combined - yeast and soda. I rummaged in books and walked around the Internet, read reviews and arguments on this topic. I learned that no one knows how these two components work together, but traditionally this combination has been used in Hungarian cuisine. And according to this, I concluded that until you try it, you will not understand anything (not for nothing, I once wrote a recipe). Made once and the dough turned out just a fairy tale!

Thought it might just be an accident, lucky? Yesterday I made dough again and baked pies out of it. The result exceeded all my expectations - airy, soft, tender pies - A GOOD BAKERY OUT. It is easy and simple to make dough; it fits very quickly, literally in 30-40 minutes at room temperature and has no yeast aftertaste, not soda.

Yeast dough with the addition of air soda

Will need
  2 tablespoons of milk, 200 g margarine, 3 tablespoons of unscented sunflower oil, 2 teaspoons of dry yeast, 1 teaspoon of baking powder or 0.5 teaspoon of soda, 2 tablespoons of sugar, 1 teaspoon of salt, 2 eggs + 1 egg for lubrication, 1 kg 50 grams - 1 kg 200 grams of flour, or if the glasses (250 grams), then 6.5 - 7.5 glasses.

  Flour dough is better to sift, to get rid of solid impurities and saturate it with air, so that the dough will become more airy and fluffy.
  The amount of flour required for kneading dough depends on the quality of flour. The best is high-gluten flour. For this reason, the recipe does not have exact data on the required amount of flour.

Cooking method
  Dissolve yeast in warm milk, add eggs, salt, sugar, melted warm margarine and mix everything well. Add half of the flour mixed with soda (not slaked) or baking powder to the obtained mass, stir well, then add two tablespoons of sunflower oil and pour the rest of the flour little by little, stirring well. The dough should be elastic and uniform, but it still sticks to the hands. Pour 1 table spoon of sunflower oil on the dough and knead it again, just a little, so as not to stick to your hands. Cover the dough with a film or napkin and leave for 30-40 minutes.


If the dough came, and the filling is not ready yet, the dough should be kneaded, covered again with film and set aside.

Cooking. Heat the milk, dissolve the yeast and leave for 5 minutes. Using a mixer, mix the softened butter, sugar, salt and egg. Add the milk with the yeast, flour and knead the dough. Place a ball of dough in a clean bowl, cover with a towel and leave for 1.5 hours in a warm place.

Sweet dough for pies



This dough is suitable for making cakes with various fillings - both sweet and salty.

You will need : 250 g margarine, 130 g sugar, 1 glass of milk, 3.5 glass of flour, 1 bag of dry yeast, 3 eggs.

Cooking. Melt margarine in a water bath. Add milk. Separately, beat the eggs with sugar and pour into the milk mixture. Add yeast. Pour flour over one glass, stirring well each time. Knead a soft dough that does not stick to the spoon, and let stand in a cool place for 3 hours.

Puff Pastry Dough



To make puff pastry work out, before cooking, cool all ingredients to the same temperature.

You will need : 260 g butter, 350 g flour, 8-10 tbsp. ice water, 1 tsp salt.

Cooking. Use hands to mix flour, salt, and 60 g of oil. 1 spoon of water and knead the dough. Cool it for 5 minutes, then roll it into a rectangle. Place 100 g of butter in an even layer in the middle of this rectangle, wrap the edges of the dough and quickly roll to turn the butter into the dough. Again, roll the dough into a rectangle, in the middle lay out the remaining butter, wrap the edges and roll. Again form a rectangle of dough, wrap the edges towards the center, overlapping each other, and roll out. Repeat this procedure 2-3 more times. Then wrap the dough rolled up and rolled into a roll with film and place in the refrigerator for at least 4 hours.

Cooking. Melt the butter, add a little beaten egg, kefir and soda and mix well. Then pour the sugar, salt, gradually add flour and knead the dough. Before cooking, hold the finished dough in the refrigerator for half an hour.

Sour cream dough for pie



Such a dough can be prepared in advance, for example, at night, in the morning to please the household with a fragrant cake.

You will need : 100 g sour cream, 1 egg, 30 g butter, 300 g flour, 4 tbsp. sugar, 1 pinch of salt, 0.5 tsp. soda and a little vinegar.

Cooking. Beat egg with sugar and salt. Pour in sour cream and put the softened butter. Add vinegar-baked soda, add flour and knead the dough.

Pastry on milk



Delicate dough is particularly suitable for pies with fruit fillings.

You will need : 1 glass of milk, 1 tbsp. vegetable oil, 1 egg, 0.5 kg of flour, 30 g of yeast, 1 pinch of salt.

Cooking. Crumble yeast and dissolve it in warm milk. Pour flour in a slide, add salt and make a recess in the center of the slide. Pour the milk with yeast into this well, beat the egg and knead the dough. Roll the dough into a bowl, cover with a towel and let go in a warm place. Then knead well again.

Pie for mayonnaise

You will need : 0.5 kg of cottage cheese, 200 ml of sour cream, 300 g of sugar, 2 eggs, 0.5 kg of flour, 0.5 tsp. salt, 1 tsp soda, a little vinegar, 1 bag of vanilla.

Cooking. Curd wipe through a sieve. Mix flour, sugar, salt and vanilla separately. Add sour cream, grated cottage cheese, eggs and vinegar soda. Knead the soft, not sticky to the hands of the dough.

Pastry Dough

You will need : 250 g margarine, 2.5 cups flour, 0.5 tsp. soda

You will need : 600 ml of fatty kefir, 3 eggs, 30 g of yeast, 100 g of butter, 100 g of sugar, 1 tsp. salt, 1 kg of flour.

Cooking. Kefir room temperature, mix with sugar and yeast and leave in a warm place for 15 minutes. Then add the sifted flour, stir. Add butter and eggs and knead well so that the dough does not stick to the walls of the bowl. Lubricate the bowl from the inside with vegetable oil, place the dough, cover with a towel and place in a warm place for 1 hour.

Meat Pie Dough



As a filling, you can use any meat, chicken or minced meat.

You will need : 120 g butter, 1 cup sour cream, 1 egg, 2.5 cups flour, 0.5 tsp. baking powder, 0.5 tsp salt.

Cooking. Mix melted butter with sour cream, egg, baking powder and salt. Add 2 cups of flour and knead the soft, non-sticky dough to your hands. If necessary, add the remaining flour. Divide the dough in two, cover with a towel and allow to "rest" for half an hour.

Fish Cake Dough



To diversify the fish stuffing, add vegetables to it - onions, spinach, tomatoes.

You will need : 200 g butter, 2 eggs, 1 tbsp. sugar, half a bag of dry yeast, 30 ml of water, 0.5 tbsp. salt, 2 cups flour.

Cooking. Mix flour with yeast. Add oil grated on a coarse grater and mix by hand. Pour sugar, salt, beat in eggs, pour water and knead the dough, adding more flour if necessary.

Potato dough



Fruitful yeast dough   It goes well with stewed potatoes or mashed potatoes.

You will need : 30 g butter, 1 egg, 1.5 cups of milk, 4 tbsp. sugar, 1 tsp salt, 2 tsp dry yeast, 1 tbsp. vegetable oil, 2.5 cups of flour.

Cooking. Heat the milk a little and add sugar, salt and yeast and leave for 10 minutes. Pour the flour in a slide and make a recess in the center. Apple Pie Dough

Cooking. Divide eggs into whites and yolks. Add sugar and vanillin to the yolks and rub it white. Protein whip in foam with a pinch of salt. Then combine the whites with the yolks and mix. Add flour and vinegar-baked soda. Mix gently and proceed to the preparation of the cake.

Pastry Jam



Divide the dough into two parts, roll out one and put in the form, put the stuffing, and sprinkle the top with a second piece of dough, frozen and grated on a coarse grater.
