Once, in order to present this specially to the distinguished guests, the owner of the restaurant prepared a folded herb, which is made up of 47 ingredients: tender grouse meat, overseas shrimp, boiled cowhide, chicken fillet and give rise to cancerous necks.

Monsieur Oliva placed the finished herb on a plate and decorated it with chopped boiled potatoes, the same chopped salted cucumbers, peas and boiled eggs, which were cut into pieces. Crowds of people began to come to the restaurant, asking for a new herb - Olive salad. And in the spring of 1894, the first article about the Olive salad was published in the magazine “Our Hedgehog”. At that time, the salad became popular and became the most popular beyond the borders of Moscow.
